
Rainbow trout and coconut rice
Packed with flavour and really healthy and simple, this makes great meal if you want to add oily fish to your kids' diet.

Serves 4

Cook 35 minutes
200g basmati rice
1 tbsp grated ginger
1 clove garlic, crushed
400ml tin coconut milk
1 tbsp soy sauce
4 rainbow trout fillets
Dressing:
1 tbsp sesame oil
2 tbsp lime juice
2 tbsp soy sauce
Small bunch fresh coriander, chopped
Red chili (optional)
1. Preheat oven to 180C (fan)
2. Mix the rice, ginger, garlic, coconut milk and soy in a lidded, oven-proof dish
3. Bake for 20 minutes
4. Give the rice a stir, then place the trout fillets on top and return to the oven for 15 minutes
5. Mix together the dressing ingredients and pour over everything before serving
