Go-to meals

Every family has a few go-to meals: ones which are easy to prepare and you can almost guarantee that everyone will eat it, not an easy task! In my house, macaroni cheese is a sure-fire winner. It isn’t the healthiest of dishes, so I always add some vegetables to make it more balanced - just throw some peas, broccoli or carrots in with the pasta as it’s cooking. Adding a tin of tuna or some crispy fried bacon makes it more appealing for grown-ups. I try to keep this as an occasional treat as it is quite salty with all the cheese, but clean plates all round is worth the effort.

Prep: 15 minutes

Cook: 25 minutes

Serves 4 adults

300g pasta (preferably wholegrain)

2 handfuls of vegetables, eg broccoli, peas, carrots

50g butter

50g flour

500ml milk

200g cheddar cheese, grated

1.Preheat the oven to 180°C/356°F/Gas Mark 6

2.Cook the pasta and vegetables together in one pan of boiling water, according to pack instructions

3.Melt the butter in a saucepan and stir in the flour. Allow to cook for 1 minute

4.Gradually add the milk, whisking all the time. Bring to the boil and cook for 2 minutes

5.Remove the sauce from the heat and stir in ¾ of the cheese

6.Mix the sauce with the pasta and vegetables and transfer to an ovenproof dish. Sprinkle over the remaining cheese

7.Bake for 25 minutes until the top is browned and the sauce bubbling
