
Easter treats
It wouldn’t be Easter without some chocolate, so here’s a quick and simple recipe that children will love to help out with. I’ve avoided the use of mini eggs with hard shells due to recent press about choking – solid chocolate eggs are easier to eat but young children should still be supervised. These are very sweet so enjoy in moderation!
Preparation time: 10 minutes
Makes approx. 12 cakes
200g white chocolate
80g puffed rice cereal
Mini chocolate eggs, to decorate
1. Melt the white chocolate in a bowl sat over a pan of simmering water (don’t let the bowl touch the water)
2. Remove the bowl from the heat and gently stir in the puffed rice
3. Spoon the mixture into paper cases and add chocolate eggs to decorate
4. Chill in the fridge for one hour to set
